RECIPE | Pooh's honey and brazil nut biscuits

I recently picked up a second-hand copy of The Pooh Cook Book by Katie Stewart and illustrated by Ernest H. Shepard. The book is inspired by everyone's favourite bear and the enduring The House at Pooh Corner by A. A. Milne.
Inside is a collection of honey-laden cakes, perfect picnic bites and other wonderful treats ideal for children and adults alike. It's an old book, first published in 1971. Until I have my own children to share the recipes with, I'm happy to indulge my own inner child.
I love the idea of combining food and literature. Inspired by the book, I decided to create my own Pooh-inspired biscuits, combining the obligatory honey and some delicious, protein-rich brazil nuts. They're not too sweet and have a lovely subtle honey flavour and crunch.


Ingredients:
90g unsalted butter (softened)
60g golden caster sugar
1 egg
200g plain flour
2 tbsp honey
a handful of brazil nuts (use any type of nut) chopped finely (or crushed)
Method:
1 - Heat the oven to 180 degrees. Mix together the sugars and butter together in a food processor or using an electric hand mixer.
2 - Sieve in the flour and add the honey and egg. Mix together well.
3 - Press together and roll out to 50mm thick.
4 - Sprinkle the nuts over the rolled out dough, lightly pressing them in.
5 - Use a cutter to produce round biscuits and place them on a lightly greased tray.
6 - Pop in the oven for 10 - 12 minutes. The biscuits should be golden brown when cooked. Take out of the oven and leave to cool.
Enjoy with a cup of tea and a good book.
