RECIPE | Over-ripe banana and pear loaf

If, like me, you hate throwing away just-over fruit, why not give this banana and pear loaf? It's made with browning bananas and nicely ripe pears, with wholemeal flour and low-fat spread to keep balance out the sugar.

Ingredients:

2 ripe or over-ripe bananas

2 pears (or apples)

160g self-raising flour

75g wholemeal plain flour

75g low-fat spread

75g soft brown sugar

2 eggs

1 tsp cinnamon

1 tsp baking powder

Method:

1 - Melt the low-fat spread gently over a low heat or pop in the microwave for 10-20 seconds to melt

2 - In a bowl, sift in the flours, baking powder and cinnamon

3 - Mash the banana and finely chop the pears - add them to the flour mix

4 - Add in the eggs and mix well for 2 minutes

5 - Fill a small lined loaf tin and pop in the oven for approximately 50 minutes (after a successful fork test) on 180 degrees.
